Spelt soup with artichokes

From a very nice friend of mine (Ristorante Orti di Via Elisa a Lucca) I copy this recipe inspired by the famous spelt soup of Lucca and perfect for spring!

ingredients for 4 people:

  • 6 artichokes
  • 1 potato
  • 200 gr spelt
  • 1 tablespoon of tomato purée
  • salt and pepper
  • tablespoon of butter

preparation: carefully clean the artichokes, removing the toughest leaves from the stems and spines. Peel the potato and chop it up in cubes, chop up the artichockes and place them in a sufficiently high pan. Cover them with water and let them cook a long time till the leaves will be very soft.

Then whip everything till you will have a smooth cream and eliminate any remaining artichokes shreds.

Put the butter in another pan and let it melt then add the spelt. Brown the spelt until it forms a light crust then pour it into the pan where the artichokes and potato purée is, add the tomato and simmer and stir with a wooden spoon.

Add salt and pepper and let it simmer for half an hour or more till the spelt is cooked, serve it drizzled with olive oil from the Lucca hills!
